Abstract
Aflatoxins (AFs) are toxic metabolites produced by different species of toxigenic fungi called mycotoxins, they are natural contaminants in raw foods and feeds, especially legumes and cereals. Aflatoxin contamination of food is a major health risk due to its carcinogenic and hepatotoxic properties. The objective of this study was to determine and compare aflatoxin concentrations, nutritional and sensory evaluation of akara samples made from 100% cowpea paste (A1), 100% bambara groundnut (BGN) paste (A5), and from bambara groundnut-cowpea composite paste mixtures (A2, A3, A4); to assess the products’ safety for consumption. Macro and micro mineral concentrations, sensory evaluation of the samples were also assessed. Five akara samples A1, A2, A3, A4, A5 were made, The highest AFs concentration (0.070 µg/Kg) was found in A5 (Akara from BGN paste only) while the least concentration (0.027 µg/Kg) was found in A1 (Akara from cowpea paste only). A5 had highest micro and macro mineral nutrients while A1 had the least. All akara samples were well accepted by consumers. Aflatoxin concentrations in akara samples (A1-A5) were much lower than the standard safe level of aflatoxin in food. Hence, consumption of akara made from bambara groundnut paste (A5), cowpea paste (A1) and composite mixture of both (A2, A3, A4) is safe as it relates to aflatoxin B1.
The occurrence of mycotoxins in staple foods is a major food safety concern due to their adverse health effects. This study investigated the occurrence and concentrations of seven major mycotoxins—total aflatoxins (AFT), aflatoxin B1 (AFB1), deoxynivalenol (DON), fumonisins (FMN), ochratoxin A (OTA), T-2/HT-2 toxin, an...

Aflatoxin contamination of maize (Zea mays L.) and groundnut (Arachis hypogaea L.) remains a major food-safety, agricultural and economic challenge in Nigeria and other parts of sub-Saharan Africa. Aflatoxins are mainly produced by species within Aspergillus section Flavi, particularly A. flavus and A. parasiticus, and...

Dried fruits and nuts are widely consumed for their desirable sensory qualities and high nutritional value, providing essential nutrients such as proteins, healthy fatty acids, potassium, dietary fiber, and bioactive compounds. However, they are highly susceptible to aflatoxin contamination, particularly in hum...

Several fungus produce secondary metabolites called mycotoxins, which are known to have significant adverse impacts on both human and animal health. Many diseases may result from the toxicity of animal feed contaminated with mycotoxins. This work used LC-MS/MS to evaluate the feeds for residual mycotoxins, aflatoxins (...

Aflatoxins are potent carcinogenic and genotoxic secondary metabolites from fungi, posing significant health risks. This study aimed to detect the presence of aflatoxins (AFB1, AFB2, AFG1, AFG2, and AFT-total aflatoxins) in rice and rice-derived products, including puffed and flattened rice, from different local market...
