Abstract
As extensively used additives in food industries, synthetic antioxidants (SAOs) and their transformation products (TPs) always expose to humans through multiple pathways. Here, we established a suspected screening strategy based on segmental scanning and detected 33 SAOs and 21 TPs in serum samples, which included 9 newly-found TPs from the hydroxylation, sulfation or acetylation of SAOs. The concentration of SAOs, including synthetic phenolic antioxidants (SPAs) and amino antioxidants (SAAs), was 22.9-398 ng/mL. Higher levels of SPAs than SAAs aligned with their more common application in direct-consumption foods. Moreover, several TPs were present at higher concentrations than their parent compounds, which exhibited high accumulation potentials. Specially, concentrations of oxidative TPs of BHT and hydroxylated TPs of BHA were 6.50 and 91.9 times of their parent compounds, respectively. These results improve our understanding on the internal exposure of human to SAO and their TPs, providing critical data for their comprehensive evaluation.
Antioxidants are traditionally recognized for their ability to neutralize reactive oxygen species and prevent oxidative deterioration in food systems. However, their biological and technological significance extends beyond radical scavenging, as they undergo oxidation to form reactive derivatives that may exert both be...
Skin aging is a complex process influenced by oxidative stress, protein glycation, chronic inflammation, and increased extracellular matrix remodeling. Intensive research is underway on new anti-aging substances with multi-target mechanisms of action while maintaining safety and efficacy. Ergothioneine, selenoneine, an...

The health-promoting potential of garlic stems largely from organosulfur compounds (OSCs), phenolics, and flavonoids that drive its antioxidant, anti-inflammatory, and antimicrobial activities. However, key bioactive precursors such as alliin and allicin are chemically unstable, limiting the direct use of fresh garlic...
The oxidative stability of animal fat is crucial for maintaining nutritional quality and food safety. This study aimed to evaluate the effects of four phenolic antioxidants (i.e., tert-butylhydroquinone, TBHQ; propyl gallate, PG; butylated hydroxytoluene, BHT; vitamin E, VE) on the stability of lard. The inhibitory eff...

Plants such as Aloe, Rheum, Rhamnus and Cassia senna, are often used in food supplements to improve bowel function. The downside of these preparations is the presence of hydroxyanthracene derivatives (HADs), naturally occurring plant substances. Although HADs are considered important biologically active components with...
