TL;DR
This review critically evaluates the structural diversity of LAB-derived biosurfactants, covering glycolipids, lipopeptides, glycoproteins, lipoteichoic acids, and iminosugar conjugates, and examines their antibiofilm, anti-adhesion, and antivirulence activities against clinically relevant bacterial pathogens.
Genome-informed glycan-utilization predictions identified substrates capable of producing probiotic metabolites that attenuate multiple P. aeruginosa virulence phenotypes, and Arabic gum shows particular promise for microbiome-based control of multidrug-resistant P. aeruginosa.

Introduction: Biofilms are surface-attached microbial communities encased in an extracellular matrix, creating gradients and metabolic heterogeneity that foster slow-growing, antibiotic-tolerant subpopulations. Predominant in natural and clinical settings, biofilms underlie many chronic and device-related infections. B...

Bacterial biofilms constitute a critical challenge to public health worldwide. The prevalence of antibiotic-resistant Gram-negative bacteria implicated in biofilm formation has increased globally, especially among pathogens connected to healthcare facilities. Acinetobacter baumannii (A. baumannii) is an opportunistic p...

Fresh and soft cheeses feature high moisture content, elevated water activity, and nutrient richness, creating favorable conditions for foodborne pathogens including Listeria monocytogenes, Salmonella spp., Shiga toxin-producing Escherichia coli, and Staphylococcus aureus, which can contaminate products via post-pasteu...

The rise in antimicrobial resistance (AMR) demands new treatments, especially for biofilm-associated infections where bacteria tolerate antibiotics. Escherichia coli O157:H7 (E. coli O157) is a virulent foodborne pathogen that causes severe haemorrhagic colitis and haemolytic uraemic syndrome. The LuxS/AI-2 quorum sens...

Vibriosis causes substantial losses in marine and brackish-water aquaculture, while increasing antimicrobial resistance limits the effectiveness of conventional antibiotic treatment. Biofilm formation and quorum-sensing-controlled virulence further contribute to the persistence of pathogenic Vibrio species. Prophages i...
