Abstract
Eleutherococcus senticosus
(
E. senticosus
) leaves were subjected to solid-state fermentation with
Rhizopus oligosporus
KCCM11948P for 120 h to evaluate changes in phytochemicals and functional properties. Fermentation increased water-swelling, water-holding, cholesterol-binding, and oil absorption capacities. Chlorogenic acid decreased by 33.7%, whereas caffeic acid increased by 33.5% after 72 h of fermentation. L-carnitine was first detected at 72 h and reached 15.67 ± 0.50 mg/kg DM after 120 h, while β-sitosterol increased by 105.2%. Total phenolic and flavonoid contents increased by 38.6% and 20.8%, respectively. Antioxidant activities measured by the FRAP, ABTS, and ORAC assays increased throughout fermentation, and nitric oxide (NO)-inhibitory activity in RAW264.7 macrophages was enhanced by 83.0% compared with non-fermented leaves. These results demonstrate that solid-state fermentation with
R. oligosporus
improves the phytochemical composition and functional properties of
E. senticosus
leaves, supporting their potential use as functional ingredients.
Eucommia ulmoides leaf polysaccharides (EUPSs) are plant-derived macromolecules with antioxidant and immunomodulatory potential. This study investigated whether solid-state fermentation using Lactiplantibacillus plantarum modifies the physicochemical characteristics and bioactivity of EUPS. Unfermented and fermented po...

Rehmannia Radix is an important medicinal and edible plant resource in China. However, the production of paocai by fermenting Rehmannia Radix has rarely been reported. This study employed response surface methodology to optimize fermentation conditions, and investigated the changes in physicochemical properties, bioact...
Lactic acid bacterial fermentation offers a mild strategy for tailoring seaweed-derived carbohydrate fractions and strengthening their functional properties. In this study, polysaccharide-rich fractions were recovered from unfermented Gracilariopsis lemaneiformis (GP) and from biomass fermented with two marine-derived...

Red andong (Cordyline fruticosa (L.) A. Chev.) is a medicinal plant widely used in Indonesian traditional medicine and is known to contain secondary metabolites such as flavonoids, saponins, and polyphenols with demonstrated pharmacological value. Flavonoids are of particular interest due to their antioxidant, antibact...

Flammulina velutipes roots, abundant edible mushroom by-products, have potential for value-added utilization. This study evaluated the effects of Lactiplantibacillus plantarum (Lpb. plantarum) and Lactobacillus delbrueckii subsp. bulgaricus (Lab. bulgaricus) fermentation on the physicochemical properties, antioxidant a...
This study integrated metagenomic and untargeted metabolomics analysis to characterize differences in kombucha communities and metabolites between black tea–sucrose and theaflavin–sucrose systems. Theaflavins selectively enriched yeasts, particularly Meyerozyma and Lodderomyces, and increased the annotated abundance of...
