TL;DR

This research provides a theoretical foundation for regulating specific flavors in GE by examining the succession of metabolites and microorganisms during the fermentation of Gastrodia elata Blume and their interrelationships.

Abstract

This study examined the succession of metabolites and microorganisms during the fermentation of Gastrodia elata Blume (GE) and their interrelationships. A total of 739 volatile compounds (VCs) were identified, with four recognized as key VCs: dimethyl disulfide, dimethyl trisulfide, 2-nonenal, and damascenone. The dominant bacteria in the prime fermentation liquid (PFL) and secondary fermentation liquid (SFL) stages exhibited dynamic changes influenced by total acid, total polyphenols, total flavonoids, and pH, with Limosilactobacillus and Acetobacter emerging as the predominant bacteria, respectively, in these stages compared to the GE water extract (WGE) stage. Metabolomics analysis revealed that 16 metabolites were associated with chemical structure transformation maps pathways (nucleotide metabolism, biosynthesis of plant secondary metabolites) and metabolism of cofactors and vitamins (folate biosynthesis). This research provides a theoretical foundation for regulating specific flavors in GE.

Transcriptomic and Metabolomic Analyses of the Mechanisms Underlying Zearalenone Removal by Lactobacillus paracasei

Zearalenone (ZEN) is a mycotoxin produced by Fusarium species that is harmful to agricultural crops. Therefore, the prevention and control of ZEN contamination is an important concern for food safety. Lactobacillus paracasei 85 is a well-recognized probiotic with considerable potential for mycotoxin biocontrol owing to...

Integrated Fermentation, Microbiome and Metabolomic Profiles Reveal Rumen Lipotoxicity Induced by the Masked Mycotoxin Zearalenone-14-Glucoside

Under macroscopic acid–base homeostasis, masked ZEN-14G directly impairs ruminal lipid metabolism, alters microbial community structure at the strain level, and perturbs cell membrane lipid turnover strictly within an in vitro system.

Integrated analysis reveals the effects of substituting pea with mung bean on microbial succession and metabolite profiles during medium-temperature Daqu fermentation.

Daqu serves as the saccharifying and fermenting starter in Baijiu production, yet the effects of raw material variation on community succession and metabolite formation during fermentation remain unclear. In this study, amplicon sequencing and metabolomic profiling were applied to compare mung bean Daqu (MBQ), produced...

Polyphenol Bioconversion and Volatile Aroma Production by Meyerozyma sp. C3 Isolated from Kombucha in the Theaflavin–Sucrose Fermentation Model

This study integrated metagenomic and untargeted metabolomics analysis to characterize differences in kombucha communities and metabolites between black tea–sucrose and theaflavin–sucrose systems. Theaflavins selectively enriched yeasts, particularly Meyerozyma and Lodderomyces, and increased the annotated abundance of...
