Abstract

Millets are recognized as smart foods because of their nutritional richness and sustainability. Fermentation has emerged as a transformative process which includes biochemical changes in millets through metabolic reprogramming and microbial modulation. These transformations improve techno-functional properties such as solubility, viscosity, stability, while enhancing protein digestibility, antioxidant activity and mineral bioavailability. The fermentation process enables the development of millet-based functional foods that align with modern consumer demands for health and sustainability. The health implications of fermented millets are substantial. Fermentation enhances nutrient bioavailability, reduces antinutritional factors, and supports gut health through microbiota modulation. The regular consumption of fermented millets may lower risks of chronic diseases, including diabetes, cardiovascular disorders, and obesity. Microbial degradation of allergenic proteins offers potential in managing food allergies and gluten sensitivity. Recent technological advances like multi-omics integration, precision fermentation, and digital monitoring are accelerating innovation in this field. Theynergistic applications of novel processing techniques, such as germination and extrusion, further enhance nutritional and sensory qualities and expand the scope of millet-based products. Future research directions should prioritize mechanistic insights into microbial-millet interactions, consumer-centric product development, and scalable, sustainable production models. By bridging traditional practices with modern biotechnological tools, fermented millets can be positioned as globally relevant functional foods contributing to global dietary systems.
