Abstract
Avocado (
Persea americana
Mill) seeds, representing approximately 13%–18% of fruit mass, are an underutilized agro-industrial residue and promising source of value-added starch. This review evaluates current evidence on avocado seed starch, emphasizing key findings, unresolved limitations, and research priorities. Available studies indicate relatively high amylose content (30%–49%), semi-crystalline B-type or mixed A/B-type organization, high gelatinization temperatures, good paste stability, and substantial resistant starch levels, supporting its functional potential. However, substantial variation in yield and functional properties among cultivars and extraction conditions, together with the absence of standardized extraction and characterization protocols, limits reliable comparison across studies. Microwave-assisted extraction shows promise for improving recovery, but evidence for scalability and process efficiency remains limited. Research on starch modification is also uneven, with chemical approaches better studied than physical, enzymatic, and combined strategies. Food applications are supported by experimental evidence, whereas pharmaceutical, textile, packaging, and nanomaterial applications remain at varying stages of experimental validation and are therefore discussed as potential applications. Future research should prioritize standardized structure–function studies, sustainable process optimization and scale-up, systematic modification studies, and rigorous safety, toxicological, techno-economic, and life-cycle assessments. These advances are essential for translating avocado seed starch into a reliable and sustainable functional biomaterial.
Babassu coconut is predominantly found in Brazil and primarily exploited for the high-value kernel oil. This industry generates large amount of babassu mesocarp (23% of the fruit), an underutilized source of non-conventional starch. However, the complex polysaccharide matrix of the mesocarp remains a challenge for...

Global banana production exceeds 139 million tonnes annually, and the peel, which accounts for approximately one-third of the fruit mass, is largely discarded during processing. Covering literature published between 2020 and 2026, this review tests the hypothesis that banana peel of Musa spp. is a compositionally disti...
The transition toward sustainable food systems has driven the use of agricultural materials and agroindustrial byproducts as alternative sources of functional ingredients. In this study, starches were isolated from Bellaco plantains, Criollo mango seeds, and Antiquorum taro using aqueous extraction, and their physicoch...
Araucaria angustifolia residues arise from a seasonal and geographically dispersed value chain. Brazilian pinhão production increased from 8393 t in 2015 to 13,493 t in 2024, corresponding to a theoretical 2699–2969 t of seed coats based on their 20–22% share of seed mass. No equivalent national inventory exists for st...

The high viscosity and pectin content of tropical fruits have been a persistent issue in the fruit juice industry. Enzymatic treatment using pectinolytic enzymes has emerged as an effective method to improve juice yield and enhance the functional attributes. This study aimed to optimise the enzymatic treatment of avoca...
