Abstract
The article presents the results of studies aimed at determining the effect of the main genetic and paratypic factors on the quality indicators of milk in order to develop scientifically grounded proposals for improving the quality of produced products. Among the studied livestock, 41.7-65.5% of animals have the desired genotype, heterozygous animals with one desired A2 allele – 30.0-45.8% and homozygous and heterozygous animals with two undesirable A1, B alleles from 4.4 to 15.0%, which is of practical importance for targeted breeding work in terms of the production of raw milk with specified technological properties for cheese making and other processing areas, which will increase the competitiveness of the products and their safety.
The purpose of this study is to study the influence of various selection systems on the genetic potential and productive qualities of Swiss cattle. Inbred first-calf heifers produce 105 kg more milk, 0.03% more milk fat, and 0.01% more protein than outbred heifers. The difference in protein content in animal milk by lactation is not statistically significant and is within 0.01–0.02%. The maximum productivity of outbred individuals is 122 kg less than that of inbred individuals. The milk yield of animals with a moderate degree of inbreeding has increased compared to outbred animals and animals with a distant degree of kinship. The slight variability of the coefficient of variation of productive indicators indicates that the productive characteristics of animals are equal under different selection systems. Interline crossbreeding is used to increase herd productivity and improve the genetic characteristics of the population Among the daughters of the Amur 3033 line of bulls with a moderate degree of inbreeding and a genetic similarity coefficient of 12.5%, as well as among the herd’s descendants of the Nelsland 3135 bull in the IV–IV line of the pedigree, the highest milk yield was observed. In terms of milk fat content (4.37%) and protein content (3.54%), the animals of the Concentrate 106157 related groups, which were inbred on the Emory 181329 (IV–V) bull with a genetic similarity coefficient of 9.3%, demonstrated an advantage. During the study period, inbred and outbred animals of this herd had low heritability of productive traits.

Increasing productivity and improving meat quality are considered today as priorities for the development of the sheep breeding. In this regard, it is necessary to move to the modern approaches aimed at solving the issue of increasing production and improving the quality of mutton, one of which is the use of molecular genetic methods. The purpose of this research was to study the conformation
features of young rams Manych merino breed depending on the genotypes of polymorphisms of the gene FRY. In order to study the relationship with lifetime indicators of meat productivity, two polymorphisms of the gene FRY were selected at positions 29040877 and 29358679. Data analysis showed a reliable association of the genotypes of the studied polymorphisms with the body weight and body measuring of young rams at the age of 9 months. A comparison of animals with carriers of different genotypes by polymorphism 29040877 showed that the group of animals with the genotype CC significantly (р < 0.05; р < 0.01) exceeded the other two groups of young rams with the genotypes CT and TT by 5.1 and 11.1 % in terms of live weight. At the same time, the group of animals with the CT genotype had the highest value of the studied trait by 5.7 % (р < 0.05), in contrast to the group of young rams with the TT genotype. In addition, a group of young rams with the CC genotype showed a high degree of body weight parameters that characterize traits of better meat productivity. A similar pattern was observed for polymorphism 29358679. Thus, the group of young rams with the genotype AA was characterized by an increase in body
weight (by 10.2 %) and a better ratio of external body parts characterizing them as animals with well-defined meat forms. The group of young rams with the genotype AG exceeded the group of young rams with the genotype GG by 6.0 % in live weight. The use of these genetic markers to assess and predict the meat quality of sheep will reveal additional reserves for increasing meat productivity through the realization of genetic potential, which will contribute to the growth of mutton production.

The present study aimed to compare the nutritive quality of milk from Holstein Friesian (HF) crossbred, Jersey crossbred, and Tharparkar cattle. Milk quality and production are complex traits governed by the interaction of genetic potential, nutritional management, environmental conditions, and husbandry practices. The study was conducted over 45 days at the South Farm of Vanavarayar Institute of Agriculture (VIA) in the Pollachi region. Milk samples were analysed for fat percentage and solids-not-fat (SNF). The results showed that SNF content did not differ significantly among the three breeds. Jersey crossbred cattle recorded the highest average SNF (7.71%), followed by Tharparkar (7.62%) and HF crossbred cattle (7.51%); however, these differences were statistically non-significant (p > 0.05). In contrast, milk fat percentage varied significantly among breeds. Tharparkar cattle produced milk with the highest fat content, Jersey crossbred cattle had intermediate fat content, and HF crossbred cattle had the lowest fat content in this region. Tukey's post hoc analysis confirmed that all pairwise comparisons were statistically significant, indicating that breed has a strong influence on milk fat percentage. The superior fat content observed in the indigenous Tharparkar breed highlights its genetic potential for producing milk with enhanced compositional quality, whereas the comparatively lower fat percentage in HF crossbreds reflects the breed's selection for higher milk volume rather than milk solids.

The article discusses the influence of various types of selection on the variability of productive traits of Alatau cattle in
the meat and dairy direction of productivity based on a comprehensive assessment. To conduct research on this issue,
four groups of daughters of cows obtained from linear, crossed, purebred imported and crossbred bulls were selected
using different types of selection. It was revealed that cows obtained from linear bulls with homogeneous selection had a
negative relationship of milk yield with ancestors with fluctuations from – 0.107 to -0.019, and vice versa, cows obtained
from linear bulls with moderately heterogeneous and heterogeneous selection had a positive relationship of milk yield
with ancestors with fluctuations from 0.030 to 0.309.

Simple Summary Goats are a mainstay of milk production in dry and difficult regions, supporting the livelihoods of millions of smallholder farmers and supplying milk that is nutritious, easy to digest, and less likely to trigger allergies than cow milk. Yet breeding goats for higher and better-quality milk has progressed more slowly than in dairy cattle. Modern DNA-based tools can accelerate this progress by pinpointing the genes that shape how much milk a goat produces and how rich it is in fat and protein. This review brings together findings from many studies to identify which genes most reliably influence these traits and how they act inside the udder. Such knowledge allows breeders to select superior animals earlier and more accurately. Realizing these benefits will require larger, carefully recorded goat populations and the combining of different biological datasets, ultimately helping farmers raise more productive herds and improving the supply of high-quality goat milk.

It was established that under the condition of using the acid-rennet method of cheese production, protein losses were greater in the production of milk from cows of genotype AA and AB AA and AB (27.9 and 27.8%). Greater fat losses were found in milk samples from cows of the AB genotype (39.6%). The greatest losses of protein (22.6%) and fat (49.8%) were obtained under the condition of using the thermo-acid method of coagulation of proteins in milk samples from cows of the AA genotype. The superiority of milk samples from cows with AA and BB genotypes was established based on the ratio of actual and estimated cheese yield.
