Characterization and Antibacterial Activity of a Low-Molecular-Weight Bacteriocin-like Inhibitory Substance S-2 Produced by Leuconostoc falkenbergense SBL-85-2 Against Aeromonas hydrophila

Experiments confirmed that this substance is heat-stable, non-toxic, and exerts antibacterial activity through disruption of the outer membrane, which provides a novel strategy for controlling A. hydrophila in aquaculture.
