Abstract

Maximizing the use of raw materials is a priority for every production facility. This approach increases the profitability of the company and solves some of the problems associated with the disposal of its main waste products. Ethyl alcohol production is a complex biotechnological process in which resource conservation is a current task. A comprehensive approach to alcohol production includes a multi-product scheme, including the use of waste as secondary raw materials. The main waste products include stillage’s filtrate and condensate from a vacuum evaporation unit. They have the potential to partially replace water at the stage of preparing the grain mix, which will reduce the cost of their disposal. The article studies the effect of this technique on the fermentation activity of yeast and the quality of the resulting alcohol. It was found that the combined use of 20 % of the stillage’s filtrate and 40 % of the vacuum evaporation unit condensate as a partial replacement of water has a positive effect on the fermentation activity of the yeast biomass. The fermentation process proceeds with a 10 % lower increase in titrated acidity. By creating favorable conditions for enzymes and yeast, hydrolysis and fermentation proceed more efficiently. The accumulation of by-products such as fusel oils, esters, and aromatic alcohols in experimental variants is reduced by 5–25 % compared to the control variant. This has a positive effect on the quality of the resulting products and their organoleptic properties. At the same time, there is an increase in the content of ketones, which is associated with the possible occurrence of acetone-butyl and butyric-acid fermentation. This factor must be taken into account when the liquid media in question are recycled multiple times.
